A ‘Coco’ is a coconut cake in the traditional Indian dish.
This cake, which can be eaten with rice, is often served as a side dish.
But this cake has been given the recipe and recipe is in the Indian blog of the ‘Cupcake blog’, which is popular in the US and Canada.
The recipe is called ‘Pecan Banana Cake’ and the recipe calls for: 1 1/2 cups (3.5-4.5 oz) of coconut milk, divided in half 1/4 cup (2.5 to 3 oz) sugar 1 teaspoon vanilla extract 1/8 teaspoon cinnamon, or more to taste 1 cup (180 ml) boiling water 1/3 cup (45 ml) coconut cream 2 eggs 2 cups (8 oz) semi-sweet or non-dairy milk (such as low-fat almond milk or almond milk) (or other non-fat milk) 1/6 cup (25 ml) sugar 2 tablespoons (20 ml) vanilla extract.
The coconut milk has to be very sweet, and there must be a good balance of sweetness and acidity, so that it tastes creamy and not too sweet.
2 tablespoons coconut cream, added to the batter after the first few minutes, adds a lovely caramel flavour to the cake. 3.5.3208
