Add the egg, and continue whisking.

Bring to a boil over medium heat.

Remove from heat and set aside.

In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, and lemon juice.

Set aside.

Add in the sugar and stir to combine.

Add more sugar and whisk to combine well.

Add a tablespoon of the melted butter to the flour mixture and mix until just combined.

In the same bowl, whisk together the eggs, sugar-water mixture, cornstech, and soy sauce.

Pour into the saucepan and whisk until it is completely combined.

Stir in the remaining tablespoon of butter.

Add 1/6 cup of the dry ingredients to the wet ingredients and whisk well to combine to form a dough.

Cover and let rise at room temperature for 30 minutes, or until doubled in volume.

To make the custard: In the bowl of a stand mixer, cream together the butter, sugar mixture, and water until smooth.

Add flour mixture, whisking constantly until just incorporated.

Beat in the dry fruit mixture and remaining tablespoon butter.

Pour batter into prepared pie crusts, and bake at 350 degrees for 15-20 minutes, rotating halfway through.

Beat until fluffy.

Add powdered sugar to the bowl, and stir with the mixer on low speed until the powdered sugar is dissolved.

Add egg mixture to the dry, and whisk on high for another minute or two.

Add vanilla, cinnamon and nutmeg to the frosting.

If desired, add in a few drops of water to the cream to thin the frostings slightly.

To serve, frost with a thin layer of frosting on top of the custards.

*Optional.

Use 2/3 of the sugar in the cream.

Frosting can be a bit thick, so you can leave a little space between the frosted custards, and then fill it with more powdered sugar.

If you don’t have powdered sugar, use 1/15 cup of sugar.

To Make Fruit Dances: In another electric mixer with the paddle attachment, whip the rice vinegar, corn, and meal until smooth, about 5 minutes.

Add corn starch and corn meal, and mix well to form the dough.
